What Is Jerk Pork?

Jerk pork is the original Jamaican jerk dish — the one that came before jerk chicken. It traces its origins to the Maroons, escaped enslaved Africans who formed free communities in the mountains of Jamaica in the 17th century. They cooked wild boar in pits lined with pimento wood, seasoned with Scotch bonnet peppers and allspice.

Jerk Pork vs. Jerk Chicken

Jerk pork is richer, more intense, and more complex than jerk chicken. Pork has more fat, which absorbs the jerk marinade more deeply and renders slowly over charcoal, creating a more layered flavour. The skin crisps to a crackling-like texture while the interior stays juicy.

The Cuts

Authentic jerk pork uses pork shoulder (Boston butt) or pork belly. Shoulder has the ideal fat-to-meat ratio for slow charcoal cooking. Pork belly produces a richer result with crispy skin.

The Marinade

Authentic jerk marinade contains: Scotch bonnet peppers, allspice (pimento), fresh thyme, scallions, garlic, ginger, brown sugar, soy sauce, and lime juice. The pork is marinated for a minimum of 24 hours before going on the charcoal grill.

History: From the Blue Mountains to Don Mills

Jerk pork traces its origins to the 17th-century Maroons of Jamaica. The technique spread across Jamaica and arrived in Toronto with Caribbean immigration in the 1950s–60s. Mr. Jerk opened at 3050 Don Mills Road in 1986, bringing charcoal-grilled jerk pork to North York.
