Curry goat is one of the most direct examples of Jamaica's multicultural history. When Indian indentured workers arrived in Jamaica in the mid-1800s after the abolition of slavery, they brought their spice traditions with them — including curry powder. Jamaicans adopted the technique and adapted it to local ingredients and tastes.
The result is distinctly Jamaican: curry powder meets scotch bonnet pepper, fresh thyme, allspice, and green onion. It's not Indian curry and it's not just seasoned goat — it's its own thing, and it's been a staple of Jamaican cooking for over 150 years.
Authentic curry goat is always bone-in. The bones add flavour to the braising liquid as the dish cooks — the marrow and collagen enrich the sauce in a way that boneless meat simply can't replicate. It's messier to eat, but that's the point.
Goat meat is leaner than beef and has a slightly gamey, mineral-forward flavour that pairs exceptionally well with curry spices. When braised low and slow, it becomes remarkably tender — the meat pulls cleanly from the bone with a fork.
